San Antonio Caramel Company Crafts Chewy Goodness

At Wildflower Caramel Co., quality is a primary ingredient in the recipe for success. Owned by Matt and Ellyn Dixon, the craft caramel company located in San Antonio, Texas offers sweets that are small yet full of flavor, packing chewy goodness into every bite. The husband and wife duo began their journey in the confectionary world nearly a decade ago. Today, their caramels can be found at Whole Foods and Hotel Emma, as well as in cities across Texas and California. The Dixons carefully crafted their own unique recipes to produce bite-sized caramels infused with quality ingredients.

For Ellyn, quality and care are mixed into all she pursues. The Texas A&M University graduate previously pursued a career working with nonprofit organizations right out of college, inspired to work with others to “make a difference” in the lives of children, according to the Wildflower Caramel Co. website. After Ellyn and Matt started their family, the two made a conscious decision to dedicate more time at home.

It was this shift in careers that prompted the birth of something new for the Dixons. Ellyn created her first batch of apple cider caramels in 2012, drawing inspiration from her childhood. According to the website, Ellyn has “fond memories of evenings spent watching my mom make dinner.” As a nutritionist, the owner’s mother instilled in her daughter the value organic and humanely raised food products have in the kitchen. This, combined with a quality over quantity mentality, both inspired and fueled a passion for Ellyn for homemade food.

As someone who enjoys the tedious process of scratch-made dishes, making caramels provided a creative process for Ellyn. The chemistry of caramel crafting for Ellyn required hard work and determination. After crafting her first batch, the owner diligently worked to develop her own recipes, learning by trial and error to determine which ingredients perfectly complement each other to produce the Wildflower Caramel taste.

Since then, the Dixons remain committed to their mission of providing irresistibly delectable treats. Wildflower Caramel Co. offers six different flavors of their caramels each week, with seasonal flavors making guest appearances every so often. The craft caramel company ensures their chewy creations are made with organic ingredients that are locally sourced and fairly traded.

Flavors include a classic salted caramel that is made with equal parts salty and sweet, an apple pie caramel infused with apple and cinnamon, and dark chocolate with sea salt caramel. Other flavors feature other Texas brands. The maple whiskey caramel offers hints of Austin company Nine Branded Whiskey blended into the candy. The honey lavender caramel also includes nature’s sweetener sourced from Geyer Farms in Moore, Texas. For those crazy about caramel, Wildflower Caramel Co. even offers a subscription service! Candy lovers can order a caramel subscription box, in which they will receive two dozen individually packaged caramels every month for up to a year.
