Golden Lux Potatoes
Ingredients
- 4 pounds Yukon Gold potatoes, cut into 1 ½ inch pieces
- 1 stick butter
- 1 cup heavy cream
- Salt and pepper
Instructions
- Place the potatoes, covered with water on a burner set to medium-high heat. Add 2 teaspoons of salt to the water when it comes to a boil and cook until potatoes are tender about 15 minutes.
- Meanwhile, in small chef pan heat butter until it is melted. Continue to cook the butter stirring often, over medium
heat until it begins to brown. When brown, pour the butter into a waiting dish and set aside until the potatoes are ready. - Drain the water from the potatoes and mash them with cream and browned butter.
- Salt and pepper to taste.
